About Apalache Chocolate
Apalache Chocolate was founded in 2019 by Matt Sibley, who was inspired by Willy Wonka as a child and later studied Spanish and Latin American history and culture. Participating in the Rasquache Artist Residency in San Francisco Cuapan, Puebla, Mexico, where cacao drinking is a tradition, motivated him to learn to make his own chocolate and toast cacao from scratch.
