Charley and Carol Baer have operated Baer's Best for over three decades specializing in heirloom bean varieties that have grown in the Northeast since colonial days. Located in southern Maine, they grow a rotating cast of over 20 varieties of beans, some heirlooms and some modern standards; many are no longer grown commercially anywhere else. Beans are dried in the barn, cleaned with screening machines and gravity separation, then final-graded on 100-year-old hand grading machines. Always fresh harvest and cooks quickly, without presoaking.
