About Catawba Sustainability Center
The Virginia Tech Catawba Sustainability Center partners with Roanoke County farmers to purchase calves and grass-finish them over about 18 months using intensive, adaptive rotational grazing. Cattle receive no growth hormones and only rare as-needed antibiotics. Beef is dry-aged 21 days by a local USDA-inspected processor.
