Strippaggio's premium extra virgin olive oils are sourced primarily from California and are "fused" - flavors like Basil, Garlic, and Lemon are crushed together with ripe olives immediately after harvesting for deeper, truer flavors. Their barrel-aged balsamic vinegars are sourced from Modena, Italy, where up to seven grape varieties are crushed, mixed with grape must and wine vinegar, aged in oak barrels, and approved by a master vinegar maker.
