Swallow Ridge Farm Cheese Company produces small batches of artisanal cheese using raw milk collected from local area dairy farms in New Hampshire, tested at collection and again at the factory, which is regularly inspected by the state. Founded by Peter, who studied cheesemaking at the University of Wisconsin and founded State of Maine Cheese Company, now continuing the cheesemaking adventure with partner Katie.
