About Viking Lamb
Viking Lamb LLC is owned and operated by the Knudson family, which began with a single rescued lamb named Leslie in 1997 and moved into farm-to-table lamb sales after the 2001 market downturn. Their lambs are locally-born and raised, fed an organic diet of grain feed, pasture grass, and spring water, then finished on corn. All lamb meat is USDA inspected and certified, state certified, and entirely hormone and antibiotic-free. They offer whole lambs, half lambs, lamb brats, lamb patties, ground lamb, French racks, shoulder steaks, and summer sausages, serving homes, restaurants, retailers, and college universities, and shipping to over 35 states. They also run Viking Show Lambs and Genetics with 15 club lamb stud bucks and over 500 females.
