Pasta made by hand is better. Our flour is certified organic, milled finely for a silky smooth texture, and combined with rich eggs from happy chickens and ducks around the Missoula Valley. We hand-knead our dough on spianatoia, a traditional wooden pasta board, and each noodle is individually cut or folded with brass and wood tools.
